Refinishing the maple is going to be a long dusty dirty and smelly job. Then when you get done you have a fragile surface that you don't want to get scratched. I would probably use the laminate. Thast stuff is extremely tough and scratch resistant and easy to put down and easy to keep clean. If you have good floors and don't need much prep you can have it done much quicker with a lot less inconvienence than you're going to have. Go look at some different styles. They have a lot of nice stuff out there. But your floors are going to be a lot colder than the carpet was. If your carpet was 30-40 years old just some new carpet will look really nice and save you the trouble either way and the floors will still be warm.
