Vail Cat, We are neither being paid for hi protein nor being discounted for low.... perhaps both are a factor in our variety and management decisions. I don't haul directly to a mill tho' there are several with in an hour of my place. If one goes direct there are slow unload lines and the premium for hauling there is just not worth it.... at least for me at 30minutes away and slow turn around and being a one man operation. Perhaps the mills are paying for protein.... maybe someone here in Central KS with experience with them could comment.

I would agree the Spring Wheat is King when it comes to protein. The millers have always had to blend Spring with Winter in their mixes to get the baking characteristics up to snuff. Last few years tho' they are having to use a higher %. Hopefully should help your price eventually!
