Greene County, Illinois

Here's an easy recipe to oven cook your ham and have your oven free for other things.

Buy a bone in shank ham. They are already precooked.

Make 6-8 slits in the fat (only) and put a clove of garlic in each slit.

Put the ham in double sheet of aluminum foil.

Coat ham with brown sugar.  Just before you close up the foil, pour a jar of apricot or peach preserves over the ham.

Close up the double foil

Stick the ham in the oven when you go to bed.  Oven set at 180 degrees.  All you're really doing is bringing the ham slowly up to temp.

Take it out the next morning and leave wrapped up until you are ready to slice.  Oven is then free for anything else to cook.

Guaranteed juicy and flavorful.  (my mother-in-law would be disappointed if we didn't have ham fixed this way)
