I know nothing about raising turkeys. In pic three. What are we looking at. Is that a mix of poop and dry bedding? Is the building open all the way thru or is there gating? I assume there's a concrete floor in the building? Do you clean it out at every turn? Do you have a big door you open and push it out?

Yes, except they use cardboard "fences" to keep the young birds closer together until they are so many weeks old.

No, clay bottoms.

I think most will de-cake between flocks and do a total clean out once a year but am not 100% on that.

Big doors in each end but the litter is loaded inside the barns and hauled out.
