I don't know what the average is but with the amount of product that they handle in a days time it can't be there long.   

I've toured Morrels in Sioux Falls and JBS in Worthington, neither one of them have storage room for more than a day or two worth of product.


With JBS being stuck in the past of printing and mailing checks, I'd wager that in most cases they have the product sold (probably have the money) before the hog check gets cashed.
