I would not go to pro700 if it were me. I would guess that if the tractor was autosteer ready from factory all that would really mean is that it has a steering valve and the wiring there for the nav, and remote engage switch somewhere. if your starting from scratch you can likely pick whatever direction you would like. if your familiar with 750 and like it then stick with it. ez pilots are pretty great but autopilot will always be better. if your buying new you might take a look and see what this new gfx750 is going to entail. I believe they are currently being shipped from what I was told, but the cfx750 (fm750) will still be sold for two years.
