glfarms description covers it very well. One minor addition, what we are actually measuring at the flow sensor is force. What we are interested in is mass (weight). If you remember back to high school physics:

force = mass x acceleration

We are measuring force and need to solve for mass, thus we also need to know acceleration. This is why having elevator speed is essential to the yield monitor working, the acceleration that we need to know is derived from elevator speed.
