I second the Victorinox knives with the molded handle. The are not fancy, but they are very good and never slippery. We have their paring knives and a Santoku knife that gets used every day.
My German chefs knives went into storage because they were no longer used. I prefer the Japanese style knives with the narrower sharpening angled.
Mercer makes a great bread knife if you need one of those.
Amazon has them all.
