Feed them to +/-1100# and sell them as freezer beef. Should make for a manageable size 1/4 for a family of 4 at a budget friendly price of $500-600 per quarter processed. When packers were crying for cattle, the Hereford thing wasn't as much an issue. Now that they don't need the cattle, they want you to give them the Herefords.
