variety has a big effect on test weight within the normal range. A lot of that is Kernal size and dry down characteristics of the plant.
Environmental things like fertility, girth of the ear, mislsing that last rain or late season diesease pressure can swing it hard, (spider mites) but I've seen lots of 50 BU burnt up corn weigh 58. If your corn weights 57 or 60 every year I wouldn't use that as any sort of indicator of anything. Lots of 60+ # corn yielding 200 BU and 58# corn making 250 bu

For the kernels per 56# factor in guessing yield I'd say that is very varietal. When I was checking lots of corn I could estimate varieties i was familiar with very good. The big surprises were always new varieties or unknowns.
