Going to attempt to answer your question,,,if I get it wrong guys please correct same.

Tall 10 gallon cans could hold either milk or cream. We sold on Saturday nights to local cremery who made lots of butter, dont know what else.

We separated ALL milk to skim milk and cream. The skim milk was fed to the hogs and did they ever squeal when they saw there buckets coming. In The beginning this separator was a 'hand crank',,,then we moved up to an all electric. Water had to be carried from the house to the barn each milking because it had to be washed each milking. their were lots and lots of little plates inside, couple spouts, and bowl on top. then it had to air dry and be re assembled for next milking.

When the cows were first fresh in the spring and had good grass the milk output was some higher and the can of cream got full much faster, and you needed an overflow can for some then you used the shorter can. You might need 2 tall cans or more if you were lucky.

Saturday night the cream cans sat in the back seat upright of course since they dont seal. And the egg cases filled the trunk and off to town we went for "Egg and daughter night". Which was a dime or quarter movie for the kids while Moms bought groceries in long lines, Dads did repair shopping at hardware store, then a trip to the bar to visit with everybody in town. had 5 bars in a tiny town and they were all crowded. You shopped for a bar based on a place to set and the right person you wanted to talk to.

So long story short both short and tall cans were used for cream. Those that sold whole milk had mostly all tall cans but may of had a short can to take some to house for supper or to skim some creme for same supper OR a little left over when the big cans are full.
