I've had a bit of experience with every US dairy breed. Nearly all jersey now. That picture of the Ayrshires brings back memories, but not good ones. Those things were feisty and the worst kickers we had. They wouldn't give a second thought to running a person over, if you were standing in their way. Seemed the darker the red, and the less white they had, the worse they were.

A disadvantage I'd see in Ayrshires, is the lack of diversity from the studs. I've heard recently, though, that Ayrshire is nearly the same as several Scandinavian Red breeds. Is that the case? Can you breed to these, and still call them Ayrshire?
