| I haven't blanched sweet corn before freezing in years. I use good quality corn (I don't like corn that is too mature)....pick it when it is cool in the morning not in the heat of the day. Cut it off raw and freeze in ziplock bags. Cook it by taking out what I need because it doesn't stick together. It tastes as good as fresh. I an sure extension office would tell me I should cook it, but the proof is in the eating. It takes so much of the work out of putting up corn. I also use an electric knife to cut it off the cob. | |
