Blanching before bagging helps remove dirt & microorganisms. It also removes oxygen to shrink the product so the corn takes up less space in bags.
A bigger concern would depend on how large and how packed the bags are. All kernels may not get hot enough in the bag or cooled down to stop the enzymes and ripening process. If you plan to use it withing a couple months you might be OK but the longer in the freezer the quality may decline.
