On brand new aprons, a 1/12 slope is commonly used behind the bunk.  This not only keeps the water moving but also helps the apron to be self cleaning of manure as cattle walk it down.  After the slope portion, than there is often a nearly flat portion where the manure can collect but the water can still run off - this is probably in your 2-3% slope range.
