We did some research before buying the Nesco. From what we gathered, there are only two mfgs that make dehydrators that go as high as 165F, Nesco and Excalibur. The Nesco are cheap, the Excalibur is nice but way more than we wished to spend. Also watched a YouTube video where a guy compared about 6 makes using a hot dog with a temp probe. The Nesco beat the Excalibur to 165, not that speed getting there makes any difference. As long as it gets to that temp for 20 min or so, the food is safe. Most other brands only go to about 150F so pink salt must be used in the meat. You can skip that if you pop your jerky into an oven for 20 min or so after drying to heat it sufficiently.
