I brought that up to my seed salesman yesterday. I'm thinking like you. If the soil temp gets down to 40 over the next few days and I plant corn in to that, looks like the seed would absurd 40 degree water. Even if the forecast is to warm up, the seed will still be absorbing some cold water for a few days.
I'm going to wait for the soil temps to warm some before planting. I've waited this long, another couple of days won't hurt anything.
