Here are a couple solutions that I found with Google:

Turn printer on and then unplug it for at least 15 seconds (make sure printer is ON before unplugging): https://support.hp.com/us-en/document/c03771807

I was just able to solve the problem by identifying which was the ink cartridge that was causing the issue and it turned out that it was the black one. By removing it, the printer went into one cartridge mode and I was finally able to see the normal menu, so I did all the manteinance options shown in "tools" (just in case), I re-inserted the black ink and it started working again.

I've also read that HP puts an expiration date chip in their cartridges.
