Central MN | Since nobody gave much help I'll give my opinion.
I think your right with doubling the stocking rate depending how you feed them. You would just have to watch the grass, if it's wet that they don't turn it to mud and if dry turn it to a dirt lot.
Starting cattle outside on grass would be nice. Can't get an better ventilation then that.
