Have an Ag Leader GPS 6500/Relay Receiver connected to an InCommand 1200 and trying to connect to a Case IH Magnum with Pro700 (using rear serial port) on Port B of 6500 receiver cable.

What settings does the Pro 700 need to be set on in order to look for a signal on its rear serial port? Under Toolbox > GPS, the only choices it gives me for GPS Model is 372, 262, 252, 162, 062, and AFS AccuStar. I thought maybe somewhere there should be something for a "Generic" receiver but I am not finding it. The Pro 700 is on version 30.16.0.0

You need to change the GPS Communication Type to RS232B. It doesn't really matter which of the receiver models you choose; those are mostly just to autoconfigure the receiver for electric steering.

Then make sure the 6500 is sending out NMEA at 4800-38400baud, 1hz, 5hz, or 10hz output rate, with at least GGA turned on. GSV is required as well if you want to use the Diagnostics > GPS2 screen.
