OK, a few things here. For starters when you say you are going to be using the yeild data for VRT fertilizer, do you have someone to make the prescriptions (agronomist, fertilizer dealer, etc)? or are you thinking of doing it yourself? If yourself, you are already likely beyond what APEX can do (at least easily). APEX may be ok (debateable acording to some of my clients) for printing pretty pictures, setting up pick lists, etc. Getting much beyond this, you should be looking at a better package.

The other option is to have someone do it for you. We provide this service using Mapshots EasiSuite as our base software. Depending on how many acres you have, it may be just as cheap to have us do it as do it yourself if all you are looking for is yield maps. Pretty simple, you upload your information to us and we send you .pdf files back with yield maps. If you ever want your data, we have it stored and ready for you. This works best if you have a good dealer to help you get the GS2 hardware running. We do onsite training and support as well for our full service clients, but unless you want a much bigger consulting deal, you are too far away for us to be cost effective. This is just an example of what we can do, if you can find someone closer who can be onsite with you, you may be even better off. You can save yourself a lot of learning curve on the software by having it done. Just be sure you ask about data privacy and availability. If you are thinking about taking the processing "in-house" someday it may be helpful to find someone who is running the same software you would like to (they will likely be running the "professional" version as opposed to your "farm" version) and talk to them about the ability to get your data transferred when you may want it.
