| I'd say you won't have too much trouble with that approach. Remember that the inertial sensors are built into the console, so the mounting needs to be as rigid as possible. You also have to re-do the setup wizard each time you move it otherwise the calibrations will be wrong.
The connectors for power and speakers are easy to come by at an auto shop. I would just re-route the antenna cables each time rather than trying to put different connectors on them.
