First of all I have to say that the three previous responses to this question appear to have missunderstood what the person is asking about.

It sounds to me like he is talking about the length of the bottom of the plow, not the depth to which the plow will go. Having said that, I am a firm believer that the longer boots will give you more consistent tile placement. The total length of our plow from the point to the back of the boot is about 10 feet and digging starter holes is no big deal at all. You are right to assume that digging an extra 3-5 feet each time is not that much of a time waster.

I don't believe that the top of the line laser would be needed. As long as the specs are acceptable to you, I would go with that. Alot of the options on the more pricey laser systems are more for convenience than anything. They may have a longer range, be dual grade, and have remote controls. All of these are nice options, but not necessary.
