There are many who try the route you suggest, here. We are predominately value added, specialty crop producers in western Oregon though, so that doesn't necessarily separate you from the pack. Specialization and niche marketing are excellent pathways to increased risk. Not exactly the thing the bank wants to see you do.
Allocation of time and resources for anyone getting started with specialty and value added crops is a real problem. You have to take the time to market your product, but that can impact the time you should be farming.
