If you are genuinely interested in learning about organic agriculture, I recommended that you take a look at the slides available through the following link that I developed for one of my Conservation classes at Western Illinois University:

The first 84 slides cover the historical development of organic agriculture, which in my opinion, one needs to be familiar with to understand the current organic industry.

Slides 85-109 include answers to your questions about what is required to be certified.
