Its a totally different mindset and it takes experience working both, all the time, for a dog to get good at working both.
Cattle and sheep are just different- and thats why strictly cattlemen hate working sheep. Most of what they instinctively do is wrong for working sheep, so in their mind the sheep are stupid.
