It takes a bit of a different work style and approach to working cattle than it does sheep no doubt. Even different breeds of sheep take a bit of a different approach. There are dogs who do quite well at both. I always start training with sheep no matter what stock the dog will eventually work.

The reason being is it is easier to put the basics on a dog with sheep and be in a small area with sheep, you can start the dog younger and in less time because you are there to help it and correct it. Less of a chance of injury. Once it has the basics then we move to bigger fields, larger groups of livestock and cattle if that is the direction the dog is suited for. Border Collies best suited to cattle do not have a real strong eye, are confident and basicly always coming steadily forward.

Not All working bred dogs of any breed are suited to cattle and not all are suited to sheep, and not all working bred dogs will work.
