I had hesitated to contribute as it is possible my experience here, in CenTex right on the de vide between the Humid East and Arid West, might not apply.
I also use a NH 411 disk bine, and a simple disk mower, but on alfalfa. Hay cut in early March, all of April and May, and early June is cut with the disk bine. Normally set for a full width swath and stirred with a tedder the next morning, early. Mid June and any hay alfalfa cut in July are cut with the disk mower. This hay usually lays out flat for until the second morning when it is stirred with a tedder. At this time of year I use the tedder to direct the hay two rd where I want to build a windrow to bale out of.

It is my contention alfalfa cut with a simple mower will cure as quickly as hay cut and conditioned and dropped in a windrow This is true as long as the sun will be shining. Even a wide windrow is not as good as a full width swath. ( I would like the NH 411 if it would drop the hay in an 8 ft or more width swath. )
