The protein content depends a lot on the fertilizers usage, not just the cultivars, so check that too.

I use only organic wheat for bread, but even if you don't go organic all the way (all the wheat? ;), do yourself and your family a favor and use organic at least for whole wheat bread, as it's on the bran and in the germ fat that most pesticides accumulate.
