Baking pie from ready made pie crust and filling is really not a good idea, you never know what's in it.
The canned filling was probably contaminated, don't let that drive you away from pumpkin pies, bake one from scratch to get over the bad experience.
A nice and easy flaky crust recipe is 1 part butter, 2 parts flour. Cut the cold butter stick in half inch slices over the flour, mix by hand and add salt and refrigerated water until it forms a firm ball, don't overmix, there should still be chunks of butter, they will give the flaky crust when melting. Refrigerate an hour covered with a towel before using.
