| The crop share doesn't solve that question of how to measure the corn the cows ate, but it digs into the land lords cash results from the crop being decreased by their eating. Its not a perfect solution, but it catches his attention more reliably than getting his full cash rent and then having the tenant quit.
In this rotten year for corn in a place where there's not all that much corn grown, proving loss is very difficult. I'm sure the cattle visited most of the field in the time before harvest and if they didn't eat, the knocked down many ears.
