1. We came to the same conclusion about the fat dripping down.

2. An Iowa Chop, by definition, is a bone-in, center-cut loin chop, and must be between 1 1/4 and 1 1/2" thick. Had to look that up to be clear. sorry about that. The bone-in part is what causes the chop to "stand up".
