People do still caponize chickens, in fact I am trying to get good at it myself. I haven't had a lot of sucess so far, but I know in time I will get better. It's not a hard thing to do, but like anything practice makes perfect. I have been looking locally for someone to give me some guidance, but haven't found anyone yet. As far as buying capons in the grocery stores I don't really think they are true capons, I had someone tell me it's just packaging like you said.
