I think it matters more about how you are cooking rather than what with. I can make a hell of a lot better steak on my ole cheap Kenmore gasser than my FIL can on his high dollar Holland. The Holland takes too long for steak. Like was said earlier, it's good for poultry and burgers. I get along well cooking steaks hot and fast. Locks in the juice and doesn't leave you drooling too long. Doesn't leave much time for beer while cooking but gives more time after cooking. We cook a bunch of chops at the county fair with a couple of big gas cookers. Usually do 500-1000 per day. The key to that is to have the chops smoked so you just have to get them to the right temperature. We used to use some big charcoal cookers for this and they were a PITA to keep lit and the right temp. The gas cookers are much easier and do a more even job.
