my wife says to put some water in the roaster and the duck has to be raised up off of the bottom of the pan so she uses mason jar lids and puts them (or something to raise the duck) in the bottom of the roaster and places the duck on the lids that way the duck does not soak up all the grease that is being cooked out,,, and it taste great that way and she says dont make gravy from the duck juices !!
