I've deepfried geese before and I like it.
My favorite is to take a duck or goose breast and soak it in garlic salt and water for several hours. Then pour on the Montreal Steak Seasoning and then throw it in the smoker or on the grill on pretty low heat. You want it to come off rare, but still let it smoke a couple hours.
