injecting a turkey will only flavor the parts that the marinade reach. For the best, most moist and juicy turkey, you have to brine it. You can flavor the brine if you wish, but the brine will actually change the cellular structure of the flesh. Then inject it w/your favorite flavors. Make sure it's dry before you lower it into the hot oil.

And canola oil is a perfectly good substitute for peanut oil. Keep the temp below 375 and you'll be good to go. Peanut oil has a higher smoking point than canola or corn oil, but any of them are fine to deep fry a turkey.
