You can flavor the brine if you wish, but the brine will actually change the cellular structure of the flesh. Then inject it w/your favorite flavors. Make sure it's dry before you lower it into the hot oil.
And canola oil is a perfectly good substitute for peanut oil. Keep the temp below 375 and you'll be good to go. Peanut oil has a higher smoking point than canola or corn oil, but any of them are fine to deep fry a turkey. | |
