I always inject the marinade. I've used garlic butter, cajun, mesquite, hickory and some others that I can't think of right now. Another thing I do is right before I submerge the turkey in the oil, I hand rub the entire bird with cooking oil. It helps keep the skin moist and seals in the flavor and juices even more. Every once in a while, I still bake one just to keep things mixed up. I still prefer deep frying though. I also prefer to use peanut oil. Second choice is canola oil. Happy Cooking!
