I have fried about a dozen over the years, and have found injecting works better than rubs when frying. Marinade is second choice behind injecting. Smaller turkey seems to cook better.Be careful to keep oil at proper temperature, too hot will burn the bird. I try for 325 degrees.Be sure turk is completely DRY before putting in hot grease. Have fire extinguisher handy.
