I always tried the "skin a finger nail" trick. If you can gently drag the edge across the nail and make it produce a shaving then that is sharp enough to do anything you need slaughtering livestock.
Of course, in due time, you use a callous on your finger to tell.
After that, then you just showing off for the ladies. ;-)
