Had some ripe plums I needed to use up and found this recipe in my Mediterranean cookbook. My neighborhood friend came over to taste test and said she didn't think she'd like it but she really did! She said the tastes were unusual and blended really well together. We both thought these would be good by themselves, over oatmeal or cereal, or with ice cream. Here is the recipe and below is a picture: Baked Stuffed Plums or Apricots 6 or so plums and/or apricots 1/2 cup ground blanched almonds 2 t melted butter 1/2 t almond extract 1 tb orange flower water (optional) 1/4 cup sugar Water Lemon juice Make the light syrup first. Put some sugar and water in a pan wtih the lemon juice, and boil till sugar dissolves, then simmer for 5-10 minutes. Slit the fruit enough to get the seed out. Place in baking pan. Make a smooth paste of the almonds, melted butter, almond extract, and sugar. Stuff the fruit with the paste. Pour the syrup over the fruit. Either use a covered glass baking dish, or cover with foil and bake at 350 for 1/2 hour. Enjoy!
