When we purchased a new field this year, I didn't have the time to drive the gator around the exterior, so that's where using the planting map as the boundary worked well. However, I will go out and drive it next opportunity.
First reason I wouldn't is if you talk on phone, CB, adjust the radio because that commercial is so loud, noticed a cool car that went by on the interstate and you weave even slightly, that boundary is recorded with that weave and will show up again every year until you record it again. With the gator, you have much finer control over where that boundary line goes. If you know it's not right, you're likely to just go do it again right then and there.
Something else, if you use an implement receiver, you may be OK if you don't have the problems I listed above. But if you don't and only use the tractor's GPS receiver, the planter will not perfectly follow the tractor. We all know this, but it too will show on the boundary recording.
