Hi-
I have some thawing on the counter now. Around here we call it Head Cheese or Rolled Oat Sausage. My husband and his two brothers butcher 6 or 7 hogs every New Years Day. We also do the lard and make crackling's. My sister-in-law keeps all the recipes at her house. I will get the recipe from her and post it for you. We make ours with hog heads, salt and oatmeal. They built a special form to pour it in, so when it cools they just slice it into blocks and then we wrap it. Everyone here puts grape jelly on it and eats it with fried eggs.
