That is something that I’ve done myself. When I was starting out I had access to some Jerseys that I purchased for cull cow price. They were usually heifers that when they freshened they just had 2 good quarters. I had one that wouldn’t allow you to put the milker on her without putting a rope around her midsection. I had her a long time and kept some heifers back from her. I still have 1 full blood Jersey and around 10 that are half Jersey. I’ve had pretty good luck with them. I usually breed them to an Angus bull that was mid-range on the calving ease scale and haven’t had any trouble calving. I do calve in the fall and they’ll look a lot thinner come springtime than the all beef cows but seem to always breed back. The calves will always sell right along with the others. The dairy’s in my neighborhood are gone now but if I could find some that were cheaper than what the beef breeds are bringing I would buy some more. I didn’t have real good luck when I tried it with Holstein but I like a small framed cow so the Jerseys fit that description.
