In our church the funeral dinners are taken care of by the "Eunice Club", a ladies group made up of women in the church who are interested in what the group does and want to participate. They select a member to be in charge of the dinners. Anyone interested in helping is asked to contact her. She keeps a list of people and what they are willing to prepare. The actual dinner depends on what the family desires. It may be as simple as a meat and vegetable tray taken to someone's home, or it may be a full blown dinner at the church. Generally there is a meat supplied by the church and prepared by a local restaurant or a caterer, potatoes, a couple vegetables, salads, rolls, and deserts provided by members. The coordinator has a few people willing to help serve and uses them as needed. Generally 3-4 people can do the serving. Some things, like green beans, are easiest if prepared at church. Throw the contents of an institutional size can of green beans in a pot and put tit on the stove, same for a can of corn. I think we are nearing the time when the public health department, in order to protect us from ourselves (listen carefully to the sarcasm), will force us to put in an institutional kitchen and all food be prepared on site.
