We made this recipe together over the phone one night so I am calling this Long Distance Pasta (you might WANT the distance when you look at how much garlic is in this!) Linguine 1 WHOLE BULB garlic, minced or put through a garlic press olive oil crushed red pepper chicken Lemon juice Capers (optional) Sliced fresh tomatoes (optional) (I like using grape tomatoes for this dish) Sautee chicken in 1/2 cup of olive oil till done; add a little salt. When done, add in 3/4 cup of lemon juice; put to a low simmer. Meanwhile, make your pasta; drain and set aside. In a small saucepan, sautee garlic in 1/2 cup olive oil. Be careful not to burn the garlic. Add in crushed red pepper and simmer for awhile till flavors blend. This is your pasta sauce. If desired, add in capers and tomatoes and cook a bit longer. Toss this sauce with your pasta. Serve chicken with a spoonful or two of its olive oil/lemon juice sauce. This dish tastes great while cooking, uses few ingredients, and is exciting to the palate (it's that whole hot/sour thing going on that I just love!). |
