When I make salsa i sometimes make it without onion when I am canning it..... I use celery, carrots, tomoatoes, green peppers, hot peppers, cilantro..... you can really put about whatever you want into salsa.... if you are making it fresh I would be sure to add some cilantro and some other crnchy veggie in place of hte onion like celery or try some corn... that is good also... it is the peppers and the cilantro that make the salsa. If you really like the onion have you tried a sweet onioin and microwave it a few minutes to get them to that cooked stage...
