Yup, the white yeast is normal. Just skim it off with a little sieve or screen, or a spoon. Part of the natural fermentation process. That just means you did good! Man, NOTHING beats home make sauerkraut and pork chops or pork ribs. Or, even some good quality all beef weiners. I LOVE Sauerkraut. But, thats the ole' Kraut coming out in me maybe.. ha ha.
