the best thing you can do is get a Ball Blue Book, guide to preserving

http://www.idealtruevalue.com/servlet/the-43860/Detail it gives the techniques and guideline for SAFE canning methods and has a ton of recipes for pickles,jams,etc

Another good resource is the harvest forum at gardenweb, ther are a couple of members that are extension agents specialising in this kinda stuff I believe

here is a good fairly simple tutorial on BWB canning..... but remember not everything can be canned that way, some need to be pressure canned

I will tell you that when you crack open a jar of something you preserved it is amazingly satisfying
