John the eggs are like the glue so you will need to put some in next time. You didn't use anythign time and that is probably why it is crumbly. Was the skillet dry when you took it out of the oven? I think maybe 250 for 4 hours was too long. It is hard to tell from this end. You will develop yoru own way of doing it and you will be the best meatloaf maker ever :)
